In culinary homage, Restaurants Roots Southern Table and Roots Chicken Shak have garnered acclaim for reviving the comforting flavors of chef Tiffany Derry‘s southern upbringing. The spotlight has shone brightly on Roots Southern Table as it clinched a prestigious James Beard Award nomination in 2022, and Derry herself earned recognition as a nominee for the title of best chef.
However, the gastronomic narrative is set to take a new direction as Derry embarks on an Italian culinary venture with the inception of Radici. This new restaurant, conceived in partnership with Tom Foley of hospitality group T2D Concepts, pays tribute to Foley’s childhood culinary memories.
Radici, meaning “roots” in Italian, is poised to grace the culinary scene just a stone’s throw away from Roots Southern Table in Farmers Branch. While Derry’s reputation is solidly built upon her southern-inspired culinary creations, her embrace of Italian cuisine is not a departure. Prior to the establishment of Roots Southern Table, Derry’s culinary journey encompassed six years of immersion in Italian kitchens. With Radici, Derry’s vision is to accentuate the elegance of simple ingredients and the splendor of top-quality produce, two hallmark traits she deeply admires in Italian cooking.
The germination of the Radici concept involved a collaborative exploration of Foley’s culinary heritage. Derry delved into the experiences and flavors that defined Foley’s dining table during his upbringing. A pivotal moment arose when Foley presented Derry with a tomato sauce, crafted from his mother’s cherished recipe. Witnessing Derry’s ingenuity in reimagining and enhancing this recipe left an indelible impression on Foley.
Their culinary odyssey led them to Northern Italy, where they embarked on a flavorful sojourn through the region. The duo immersed themselves in pasta-making classes, savored the complexity of Modena’s famed balsamic vinegar, and acquired the art of crafting Parmigiano cheese.
Among the numerous inspirations, open-fire cooking ignited their culinary passion. Derry emphasizes the unparalleled essence of wood-fired preparations, be it vegetables or seafood. This fervor for open-fire cooking will be prominently displayed within Radici’s kitchen, visible from every corner of the restaurant. Additionally, a chef’s table strategically positioned near the kitchen promises an intimate connection with the culinary theater.
As Radici’s menu continues to evolve, Derry envisions the inclusion of a classic pomodoro sauce paired with fresh pasta, alongside a distinctive bianco lasagna embellished with béchamel.
